Colombia - Cerro Azul - Hybrid washed Geisha

From the renowned Cerro Azul farm comes this exquisite washed Geisha, distinguished by its vibrant, sophisticated, and impeccably balanced aromatic profile.

 

Delicate floral notes of jasmine and honeysuckle dance alongside the creamy sweetness of vanilla, elevated by the bright zest of lemon and sweet orange. Subtle hints of red fruits – raspberry and strawberry – add an extra layer of complexity.

 

Its lively, crystalline acidity shines with the Omni-light roast, infusing each sip with freshness and energy.

 

When brewed as an espresso, its rich, velvety texture unveils the full depth and elegance of this truly exceptional coffee.

FERMENTATION

Each cherry is handpicked at the peak of ripeness, ensuring only the finest beans move forward. After a delicate flotation process to remove lighter cherries, we monitor the natural sugars before beginning a layered fermentation journey.

 

For 14 hours, the cherries open up their flavors in open tanks. Next, they’re taken to a sealed environment for an 18-hour, oxygen-free fermentation, deepening their profile. Finally, they’re pulped and given a refreshing aerobic fermentation for 24 more hours, ensuring that each bean carries an unmatched depth and complexity.

 

DRYING

The coffee is dried in a mechanical dryer at a temperature of 37 °C. It is then stored in a temperature-controlled warehouse at a temperature between 18 °C and 19 °C.
