Ethiopia - Bona Zuria - Anaerobic natural - 250g
The Ayele Tulu Station washing station is located in the Bona Zuria district, in the region of Sidamo, which has gained recognition for its high-quality coffee, standing out for brightness and intensity, comparable to renowned Yirgacheffe coffees.
Farmers carefully handpick ripe cherries and bring them to the station, where only fully ripe cherries are accepted for anaerobic fermentation. These cherries are sealed in GrainPro bags and ferment without oxygen for 18 to 24 hours.
After fermentation, the cherries are spread on raised beds to dry in direct sunlight, with workers turning them frequently for even drying, which takes 2 to 3 weeks.
This coffee is a true symphony of floral and fruity flavors, with exotic notes of pineapple and red fruits like raspberry and strawberry, as well as a hint of Smyrna grapes. Its balanced profile is enhanced by a rose fragrance and lively acidity that further enhance the tasting experience.
Even in the Ultra-light version, we particularly appreciate Bona Zuria when extracted at moderate temperatures.
