About 750 local farmers supply the washing station. Their farms are located at high altitudes, starting at 1,900 meters above sea level. The farms are planted with a mix of JARC (Jimma Agricultural Research Centre) varieties and local varieties that are suitable for the unique conditions of the region.
As the farms are small, most of the work is done in families. Farmers selectively hand-pick ripe red cherries and deliver them to AASH's washing station. At the station, the cherries are visually sorted by hand to remove defects, then pulped. The coffee is fermented in tanks for 36 to 48 hours, then washed with clear water. Parchment coffee is dried on raised beds and raked frequently to ensure even drying, which lasts between 7 and 11 days.
