Kenya - Baragwi PB - Lot #002 - 250g

This Kenyan washed coffee is a blend of "Peaberry" (PB) fractions from several washing stations of the Baragwi Cooperative.

 

Peaberry beans are a natural mutation of the original varietals, with only 1 bean per fruit, instead of 2. These beans, which are rounder than usual, but which cannot be simply spotted at harvest time, represent about 5% of the cherries, and are discarded during the coffee screening process, due to their small size and specific shape.

 

For this batch #002, the PB fractions from the best batches from several washing stations were combined. The result in the cup is incredibly sweet, with typical aromas of lime and currant, a few floral and buttery notes and a bright acidity that is easy to control by adapting the extraction parameters. The texture is particularly pleasant, regardless of the extraction technique used.

After harvesting, the coffee cherries are pulped and placed in fermentation for 16 to 24 hours in the shade. After fermentation, the coffees are washed and again sorted according to density, then immersed for 16 to 18 hours under the flow of a local stream.

 

The drying in the sun, on African beds, lasts up to 21 days. During this operation, the coffees are sheltered under plastic sheeting during the hottest hours of the day and during nights.
