Panama Geisha - Finca Deborah Elipse

Elipse : an exceptional coffee from Finca Deborah


Elipse is one of the most sophisticated coffees produced by Jamison Savage at his Finca Deborah farm.


Fermentation and drying process


After harvesting, whole coffee cherries are placed in closed tanks where oxygen is replaced by nitrogen. This initial stage of the fermentation process, which lasts around 50 hours, allows optimum control of the cherry environment. Temperature and pH are closely monitored to avoid the development of undesirable aromas.


Next, the cherries are washed, removing all skin and pulp. The washed coffee is then placed on the second level of a three-level drying bed system designed by Jamison Savage. This process ensures gentle, even drying in the shade, protecting the coffee from damage caused by direct exposure to sunlight or excessive heat. Throughout the drying process, temperature and humidity are maintained at precise levels.


Unique aromatic profile


This complex process, combined with the Geisha variety grown on an exceptional terroir, results in a coffee of unprecedented elegance and aromatic complexity. Floral, red berry and exotic fruit notes can be detected, as well as nuances reminiscent of ganaches from some of the finest chocolates.


The acidity of Finca Deborah Elipse is impressive, making it possible to produce drinks with high extraction ratios, offering delicate, elegant and always highly aromatic tastings.
