Iridescence : the elegance of carbonic maceration treatment
Iridescence is one of the first coffees of the Geisha variety to benefit from the carbonic maceration treatment developed and implemented by Jamison Savage since 2015.
Maceration and drying process
Iridescence is a washed coffee: most of the pulp is removed from the coffee cherries just after harvesting, before the carbonic maceration stage. The coffee is then placed in closed tanks, where oxygen is replaced by carbon dioxide. This initial stage of the fermentation process takes place under careful temperature and pH control to avoid the development of undesirable aromas.
After this initial stage, the coffee is dried on African beds in the shade, protecting it from damage caused by direct exposure to the sun or excessive heat. During drying, the temperature of the environment is rigorously controlled.
Exceptional aromatic profile
Iridescence is a highly expressive coffee, with light notes of lavender and orange blossom. Its sweetness is reminiscent of sun-drenched white peaches, accompanied by a vibrant acidity.
