Meet the Producer
Victoria Ramos, alongside her husband, Ulises Neyra, is an active member of the "El Huabo" Committee. Together, they have been producing exceptional coffee for several years and are widely recognized for the outstanding quality of their beans.
Victoria is deeply committed to continuously improving the quality of her coffee and the parchment she provides. She harvests coffee from La Chirimoya, carefully transporting the cherries to her home, where she meticulously processes them - pulping, fermenting, and drying the coffee herself. In addition to coffee, she grows yuca and plantains to support her family’s needs.
Processing
Victoria and other producers use hand pulpers, powered by motors in micro mills, to de-pulp the coffee cherries. The parchment coffee, still coated in mucilage, is placed in a concrete tub to ferment - either with or without water - for over 12 hours, depending on the specific process. Victoria ferments her pulped parchment in a specially polished concrete tank lined with ceramic tiles, ensuring quality control at every stage.
Drying
Once fermentation is complete and the mucilage is removed, the parchment coffee is spread across raised beds to dry for over eight days. This method ensures even drying and optimal preservation of flavors.
Storage
The coffee is stored as dry parchment in a warehouse until a buyer confirms their selection. It remains in this state until the purchase is finalized and the destination for shipment is set. Only then is the coffee milled and prepared for export, guaranteeing freshness and quality.
